A Visual Ode, en Soy



This is a rendition of the famous Japanese dish, Agedashi Tofu, made in my own kitchen dubbed A Medley of Soy [with colors inspired by Vogue's Forces of Fashion (2019, October 10-11) event decoration]. Instead of the traditional dashi sauce to finish, mine is an accented dashi base infused miso and roasted sesame dressing topped with a healthy spoonful of edamame, i.e. fresh soy beans, to flavor burst the soy-centric dish to a nutty and rounded flavor. It is served warm with fresh micro greens from my own kitchen garden.
